Coffee has always been the bedrock of our business and we’ve become known for consistent results. Our favoured bias is towards flavour and strength – we use a high quality blend, unique to us and we also like to serve our coffee in hot cups!
As our business grows, so too does the need to make consistently good coffee, regardless of who is making it on any given day.
So last week saw another or our in-house barista training sessions with four of our up and coming coffee ninjas!
Mia, Vicky, Amy and Becky all attended, with a view to getting their ‘coffee wings’ to start making coffee at Stray’s. We’re fanatical about coffee (amongst other things!) but over the last few years, you may have noticed our humble little coffee bar (OK it was little back in 2004) has become a bit of a hub for other things too…
When we asked some of the folks in our team ‘Why do our customers choose Stray’s’ we were surprised by some of the answers and thought we’d share them. But then, being the caffeine-driven creative that I am, it led me to ask the same question of you, our customers.

Good coffee isn't difficult to make...
So why do so many coffee shops seem to struggle getting it consistently right?
This section was put together to help you identify some of the danger signs that tell you your barista is creating deathspresso – often making a simple process look very complicated!
Let's start at the very beginning...
Our espresso takes between 23 and 27 seconds to extract. Less and the drink won’t have enough flavour. Much longer and the drink will taste burnt, bitter and probably a bit watery. If you want to make sure your coffee is going to be nice it makes sense to start with a good espresso.
Our coffees are made with our exclusive blend of FairTrade, Triple Certified coffee beans, served in either 8oz (small), 12oz (reg) or 16oz (large) and are priced as such. The only exception is with Americano where a regular is 8oz and a large is 12oz…

What makes Stray’s different? #1
We never use re-heated milk.
Every type of Latte, Cappuccino, Hot Chocolate, Macchiato & Mocha is made with freshly poured, freshly steamed milk.
We wouldn’t want to drink re-heated milk so why would you? Ok, so it means we don’t make as much money as some of the corporate coffee giants, but anything else just would be Stray’s…
We make our coffees with whole milk as the norm because it tastes better!
Please let us know if you would prefer ‘semi’ or ‘skinny’ or soya milk and we’ll adjust your drink accordingly.
We make tea with half-fat milk again, unless you prefer it another way.
Our coffee starts with a strong, nutty espresso which is not for the faint-hearted – taking between 23 and 27 seconds to extract ensures your brew is slightly bitter but not burnt or watery.
We can add or reduce how much espresso is in your drink and one of the real plus points about our family-owned and run business is that we take pride in tweaking many of our regular customers coffees to their exact specification.
If you prefer your latte a little more ‘foamy’ or your cappuccino ‘dry’, we’re here to make it happen! You might want three shots in your cappuccino or some hot milk spooning onto your Americano – just let us know how you like your coffee and we’ll make sure it’s as it should be, just for you.
We also sell teas, soft drinks and hot chocolate but our true passion is for coffee.
How did it all start?
I’d love to tell you we did loads of scientific research to come up with a special model. It’d be great to say that we tested loads of different consumers and worked out the niche.
The truth is simple. Wherever I went, it always seemed almost impossible to find a good cup of coffee. By good, I mean a decent espresso with well prepared, hot milk in it!
My thought was that the only way to guarantee a decent brew was to learn how to do it and open a coffee bar of our own. With a few adventures in between, that’s how Stray’s came about, back in 2003 and the rest, as they say, is history.
Our ethos today is the same as it was back then. People want to pay for something they can’t get elsewhere, and it definitely has to better than can be made in their own home! That drives us to continue to provide the best coffee you’ll have today.

We grind our decaf from beans…
Some ‘establishments’ use pre-ground decaf coffee because it’s easier and cheaper – it also tastes dire…
We buy decaf beans and grind them in a separate grinder daily.
So next time you buy your decaf coffee from us, don’t worry – we haven’t made a mistake and given you a regular coffee – it’s just hard to tell the difference ‘cos our decaf’s sooooooo good!
